What’s with all the hype about microgreens? As the first leaves of a vegetable or herb plant, these tiny greens can be a veritable powerhouse of nutritional value. Recent research from the Department of Agriculture indicates that certain varieties actually contain up to 40 times more nutritional value than their mature counterparts.

Vitamin C, Vitamin E, Vitamin K, antioxidants and carotenoids are just a few of the nutrients that get a boost in their concentrated micro forms. For example, 1 single ounce of broccoli microgreens is equivalent to 1.5 POUNDS of mature broccoli!
